Ingredients
1 cup cornstarch
3 ounces evaporated milk
4½ cups coconut milk (light or regular)
1 cup sugar
½ cup sweet corn kernels
3 ounces sweetened condensed milk
Directions
In a large pot, combine the cornstarch, evaporated milk, coconut milk, sugar, sweet corn kernels, and sweetened condensed milk. Stir well to dissolve the cornstarch completely and ensure all ingredients are evenly incorporated.
Place the pot over medium heat and bring the mixture to a gentle boil, stirring constantly to prevent lumps and scorching. Continue stirring until the mixture noticeably thickens and begins to bubble throughout.
Reduce heat to low and allow the mixture to simmer gently for about 30 minutes, stirring frequently. The mixture is ready when it clings thickly to a spoon and no longer drips off easily.
Pour the thickened mixture into a 9 by 13-inch pan without oiling it. Allow it to cool to room temperature, approximately 20–30 minutes.
Cover and refrigerate for at least 30 minutes until the mixture is completely set and firm to the touch.
Cut the set mixture into squares and serve chilled or at room temperature.
