Ingredients

4 thick slices bacon (4 ounces), cut crosswise into 1/4-inch slivers

Ground cinnamon, for sprinkling

3/4 cup heavy whipping cream

2 cups maple-walnut ice cream, or more to taste

2 tablespoons pure maple syrup

2 tablespoons sherry vinegar or rice vinegar

1/2 cup coarsely chopped walnuts

Directions

  1. Place the bacon slivers in a cold skillet and set over medium heat. Allow the fat to render while stirring occasionally with a wooden spoon, until the bacon becomes golden and crispy, approximately 6 to 8 minutes.

  2. Add the chopped walnuts to the skillet and continue cooking for about 2 minutes, stirring frequently, until both the bacon and walnuts are deeply golden. Watch carefully to prevent burning.

  3. While the bacon cooks, pour the heavy cream and maple syrup into a chilled metal bowl. Using an electric mixer or whisk, beat the mixture until soft peaks form. Cover and refrigerate the maple whipped cream until ready to serve.

  4. Divide the ice cream into 4 scoops and place one scoop into each of 4 sundae glasses or bowls.

  5. Spoon the warm candied bacon and walnut mixture over each ice cream scoop.

  6. Top each sundae with a generous dollop of the maple whipped cream, then finish with a light sprinkling of ground cinnamon. Serve immediately.
