Ingredients
1¾ cups Crushed chocolate cookie crumbs
3 tablespoons Brown sugar
5 tablespoons Butter, melted
8 ounces Cream cheese, softened to room temperature
1 cup Creamy peanut butter
1 cup Powdered sugar
1 teaspoon Pure vanilla extract
1 cup Heavy whipping cream
Crushed or chopped candy bar or nuts for topping
Additional sweetened whipped cream for serving
Directions
Preheat your oven to 375 degrees Fahrenheit. In a medium bowl, combine the crushed chocolate cookie crumbs with the brown sugar and toss well. Pour in the melted butter and stir until the mixture resembles wet sand and holds together when pressed.
Press the cookie mixture firmly and evenly into the bottom and sides of a 9-inch pie plate, creating an even thickness throughout.
Bake the crust for 8 minutes until it is set and fragrant, then remove from the oven and allow to cool completely to room temperature.
While the crust cools, prepare the filling: In a large bowl using an electric mixer (or in a high-powered blender), beat the softened cream cheese, creamy peanut butter, powdered sugar, and vanilla extract together until smooth and creamy.
In a separate clean bowl, whip the heavy whipping cream until medium-stiff peaks form, being careful not to overbeat.
Gently fold the whipped cream into the peanut butter mixture using a spatula until just combined, being careful not to deflate the whipped cream.
Spread the peanut butter filling evenly into the cooled chocolate cookie crust. Cover the pie lightly with plastic wrap and refrigerate for at least 1 to 2 hours, or up to several days.
When ready to serve, cut the pie into 8 slices using a sharp knife (wipe the knife clean between cuts for neat slices). Top each slice with additional sweetened whipped cream and crushed candy bar or chopped nuts if desired.
