Ingredients

1½ lb Top sirloin steak

2 medium Onions

2 tsp Curry powder

2 clove Garlic cloves, minced

1 tbsp Ginger, minced

4 stalk Scallions, chopped

¼ cup Fresh flat-leaf parsley, chopped

0.2 cup Water

2 tbsp Coconut oil or olive oil

Salt

Black pepper

2 tbsp Sesame seeds

Directions

  1. Pat the sirloin steak dry with paper towels and slice it thinly against the grain into bite-sized strips. Season the beef with salt and pepper.

  2. Peel and thinly slice the onions. Mince the garlic cloves and ginger. Chop the scallions into 1-inch pieces, keeping white and green parts separate. Chop the fresh parsley.

  3. Heat the coconut oil or olive oil in a large skillet or wok over high heat until just beginning to smoke.

  4. Working in batches to avoid overcrowding, add the beef strips to the hot skillet and sear for 2-3 minutes per side until browned on the exterior and reaching an internal temperature of 145°F. Transfer to a clean plate.

  5. Reduce heat to medium-high. Add the sliced onions to the skillet and cook for 3-4 minutes, stirring occasionally, until softened and lightly golden.

  6. Add the minced garlic and ginger to the skillet and cook for 1 minute, stirring constantly until fragrant.

  7. Sprinkle the curry powder over the vegetables and stir well to coat, cooking for 30 seconds to bloom the spices.

  8. Pour the water into the skillet to deglaze, scraping up any browned bits from the bottom. Return the cooked beef and any accumulated juices to the skillet.

  9. Add the white parts of the scallions and toss everything together. Cook for 1-2 minutes until the sauce reduces slightly and the beef is heated through.

  10. Remove from heat. Fold in the fresh parsley and green parts of the scallions. Taste and adjust seasoning with salt and pepper as needed.

  11. Divide among four serving plates. Sprinkle each serving with sesame seeds and serve immediately.

This recipe clears Charlotte's major chains without a special trip—all ingredients are standard at Harris Teeter, Kroger, Food Lion, Walmart, and ALDI—and costs roughly $12 to $14 total, or $3 to $3.50 per serving, driven by the beef sirloin and sesame seeds. The 30-minute claim is honest; dicing onion, garlic, and ginger takes 8 to 10 minutes, and the stir-fry itself is another 15 to 18 minutes, so you're looking at real-time active cooking with no downtime. It reheats reasonably well in a skillet or microwave, though the texture softens slightly, making it a flexible weeknight dish for a family that doesn't mind a bit of kitchen focus.
