3 apples (such as Honeycrisp), cored, peeled removed, and cut into 1-inch chunks
1/2 cup raisins
1/2 lemon, juiced
1/2 cup old-fashioned oats
1/4 cup whole wheat flour
1 teaspoon ground cinnamon
3 tablespoons brown sugar
1/4 cup unsalted pistachios, finely chopped
2 tablespoons butter or margarine, melted
Directions
Position your oven rack in the center and preheat your oven to 350°F. While the oven heats, prepare an 8x8-inch baking dish.
Add the apple chunks, raisins, and fresh lemon juice to the baking dish. Toss all three ingredients together until the apples and raisins are evenly coated with the lemon juice.
In a separate mixing bowl, combine the old-fashioned oats, whole wheat flour, ground cinnamon, brown sugar, and chopped pistachios. Stir these dry ingredients together until well distributed.
Pour the melted butter into the oat mixture and stir thoroughly until the mixture resembles a cohesive, breadcrumb-like texture with no dry pockets.
Evenly distribute the oat-pistachio topping over the apple-raisin mixture in the baking dish, breaking up any large clumps with your fingers.
Bake the crisp uncovered for 45 to 50 minutes. The crisp is ready when the apples are fork-tender and the topping is golden brown. Serve warm.
