Ingredients
2 cups vanilla ice cream base
½ cup coffee essence
½ cup Irish whiskey
Directions
Remove the vanilla ice cream base from the freezer and allow it to soften at room temperature for 10 minutes. Distribute 1/2 cup (125 ml) of the softened ice cream evenly among six popsicle molds, carefully pressing it down into the tips of each mold to fill the base firmly and uniformly. Return the filled molds to the freezer.
Let the remaining ice cream base soften for another 10 minutes. Transfer it to a mixing bowl and stir in the coffee essence and Irish whiskey until well combined and smooth.
Remove the popsicle molds from the freezer and carefully spoon the coffee-whiskey ice cream mixture on top of the frozen vanilla layer in each mold, distributing it evenly. Insert a popsicle stick into the center of each mold and return them to the freezer. Freeze until completely solid, approximately 2 hours.
