Ingredients

1/2 tablespoon unsalted butter

2 large slices sourdough bread

4 slices sharp cheddar American blend cheese

1/2 pound thinly sliced roast pork

1/2 cup fresh arugula

4-6 pickled cherries, halved

Directions

  1. Preheat your panini maker to medium-low heat.

  2. Butter one side of each sourdough slice with 1/4 tablespoon of butter on each.

  3. Place one slice of bread butter side down on a work surface. Layer 2 slices of cheddar cheese on top.

  4. Evenly distribute the thinly sliced roast pork over the cheese.

  5. Add the fresh arugula over the pork, then top with the halved pickled cherries.

  6. Layer the remaining 2 slices of cheddar cheese over the cherries.

  7. Place the second slice of bread, butter side up, on top to complete the sandwich.

  8. Transfer the assembled sandwich to the preheated panini maker. Cook on medium-low heat for about 15 minutes, pressing gently, until the cheese is fully melted and the bread is golden brown. Cook low and slow to allow the cheese to melt completely and warm through the pork.
