Ingredients

2½ pounds Boneless, skinless chicken breasts

⅓ cup Extra virgin olive oil

⅛ cup Fresh squeezed lemon juice

1 tablespoon Fresh lemon zest

2 tablespoons Fresh oregano, chopped

½ teaspoon Sea salt

pinch Freshly ground black pepper

Directions

  1. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, lemon zest, and chopped fresh oregano until well combined.

  2. Season the marinade with sea salt and a pinch of freshly ground black pepper, stirring to incorporate.

  3. Place the chicken breasts in a large, shallow dish or resealable plastic bag. Pour the marinade over the chicken, ensuring all pieces are evenly coated. If using a bag, seal and gently massage to distribute the marinade. Let marinate for at least 15 minutes at room temperature, or up to 2 hours in the refrigerator.

  4. Preheat your grill to medium-high heat (approximately 400°F), or heat a grill pan over medium-high heat.

  5. Remove the chicken from the marinade, allowing any excess to drip back into the dish. Season lightly with additional salt and pepper if desired.

  6. Place the chicken breasts on the hot grill or grill pan and cook for 5–6 minutes on the first side without moving them, until light golden grill marks form.

  7. Flip the chicken and cook for another 5–6 minutes on the second side. The chicken is done when an instant-read thermometer inserted into the thickest part of a breast reads 165°F (74°C) and the juices run clear.

  8. Transfer the grilled chicken to a serving platter and let it rest for 2–3 minutes before serving. Serve warm with your choice of sides.
