1 kg ground beef

1 medium onion, finely chopped

1/2 cup seedless raisins

1/2 cup blanched almonds

1 tablespoon apricot jam

1 tablespoon fruit chutney

1 slice white bread

2 teaspoons butter or oil

3 large eggs

250 ml milk

25 ml lemon juice

2 teaspoons curry powder

1 teaspoon turmeric

2 bay leaves

2 teaspoons salt

Directions

  1. Soak the white bread in 125 ml of milk for a few minutes until softened. Squeeze gently to remove excess milk, then crumble the bread into the ground beef in a large bowl.

  2. Add the chopped onion, raisins, almonds, apricot jam, fruit chutney, lemon juice, curry powder, turmeric, and salt to the beef and bread mixture. Stir until well combined.

  3. Heat the butter or oil in a large frying pan over medium-high heat. Add the beef mixture and cook, stirring frequently, until the meat is browned and no longer pink, about 8-10 minutes.

  4. Transfer the browned beef mixture to a greased baking dish or casserole. Arrange the bay leaves on top of the meat.

  5. In a bowl, whisk together the remaining 3 eggs and 250 ml milk until well blended. Carefully pour this custard mixture over the meat layer.

  6. Bake in a preheated 180°C (350°F) oven for about 50 minutes, or until the custard is set and golden on top. The internal temperature should reach 160°F.
