Middle Eastern Pita and Vegetable Salad (Fattoush)

A vibrant, fresh Mediterranean-inspired salad combining crispy pita bread with mixed greens, tomatoes, cucumbers, and herbs, dressed with a tangy lemon-yogurt vinaigrette. This vegetarian salad is light, nutritious, and perfect as a side dish or light meal.

Ingredients
3 breads Arabic pita breads, 6-inch
1 large clove garlic clove, finely chopped or minced
½ teaspoon salt
¼ cup fresh lemon juice
¼ cup extra virgin olive oil
¼ cup plain low-fat yogurt
to taste freshly ground black pepper
1 pound tomatoes, coarsely chopped
1 European or 3 Persian European cucumber or Persian cucumbers, sliced into half-moons
6 scallions scallions, white and light green parts, sliced
½ cup fresh flat-leaf parsley, chopped
¼ cup fresh mint leaves, slivered
1 heart romaine lettuce heart, inner leaves, cut crosswise into half-inch pieces
4 cups fresh arugula, watercress, or purslane (or a combination), coarsely chopped
2 teaspoons ground sumac
Directions
Prepare the pita breads by breaking them into bite-sized pieces if they are stale, or cutting fresh breads into quarters and gently separating the layers. Spread the pieces on a baking sheet and toast in a 325°F oven for 5 to 8 minutes, stirring occasionally, until they are golden brown and crisp. Set aside to cool.
In a small mixing bowl, whisk together the chopped garlic, fresh lemon juice, salt, extra virgin olive oil, and plain yogurt. Season with freshly ground black pepper to taste and set aside.
In a large salad bowl, combine the chopped tomatoes, sliced cucumber, scallions, parsley, mint, romaine lettuce pieces, and the mixed greens (arugula, watercress, and/or purslane). Toss gently to distribute the ingredients evenly.
Just before serving, pour the lemon-yogurt dressing over the salad and toss well to coat all the vegetables. Crumble the cooled pita bread pieces over the salad, sprinkle with ground sumac if desired, and toss one more time. Taste the salad and adjust the seasoning with additional salt and pepper as needed. Serve immediately.
