Microwave Cauliflower and Peas in Cream Sauce

Ingredients
2 cups Cauliflower florets
1 cup Fresh or frozen peas
2 tablespoons Water
¼ cup Onion, finely chopped
1½ teaspoons Butter
1 tablespoon All-purpose flour
½ cup Fat-free skim milk
1 tablespoon Chopped pimiento, optional
½ teaspoon Parsley flakes
½ teaspoon Chicken bouillon
⅛ teaspoon Salt
1 dash Ground black pepper
Directions
Thoroughly wash your hands with soap and warm water before beginning.
Place the cauliflower florets and peas into a 1-quart microwave-safe casserole dish and add the water.
Cover the casserole with a lid or microwave-safe plastic wrap, leaving a small corner uncovered for steam to escape.
Microwave on high power for 6 to 8 minutes, stirring halfway through the cooking time, until the cauliflower is fork-tender.
Remove from the microwave and let the covered vegetables stand for 1 minute.
While the vegetables are cooking, place the chopped onion and butter in a 2-cup microwave-safe measure or small bowl.
Microwave the onion and butter on high power for 1 to 1½ minutes until the onion becomes soft and tender.
Stir the flour into the onion and butter mixture until well combined and smooth.
Microwave the flour mixture on high power for a few seconds (15 to 30 seconds) until it just begins to bubble slightly.
Carefully stir in the skim milk, pimiento (if using), parsley flakes, chicken bouillon, salt, and black pepper until smooth.
Microwave the sauce on high power for 1½ to 2 minutes until it thickens, stirring well every 30 seconds for even cooking.
Drain the cooked vegetables, reserving the cooking liquid (you may freeze it to use later in soups). Pour the warm cream sauce over the drained vegetables and gently stir until everything is evenly coated.
Serve immediately as a side dish.
