Ingredients
2 bunches fresh mint, 30 leaves reserved
1 quart filtered water or simple syrup
Directions
Bring a pot of water to a rolling boil. Carefully place the mint leaves (all but the 30 reserved leaves) into the boiling water and blanch for exactly 30 seconds.
Using a slotted spoon, immediately transfer the blanched mint to a bowl filled with ice water. Let cool for 2–3 minutes, then drain well.
Place the cooled mint into a high-powered blender with 1 quart of filtered water or simple syrup. Blend on high speed until completely smooth and vibrant green.
Strain the mint puree through a fine-mesh chinois, cheesecloth, or coffee filter into a clean bowl. Repeat the straining process a second time to ensure the liquid is completely clear.
Pour the strained mint liquid into ice cube trays. Place one reserved mint leaf into each cube cavity, then freeze until solid, approximately 4–6 hours or overnight.
