Ingredients
4 cups all-purpose flour
4 cups whole wheat flour
1⅓ cups nonfat dry milk
¼ tablespoon baking powder
1 teaspoon salt
1½ cups shortening
Directions
Begin by washing your hands thoroughly with soap and warm water to ensure food safety.
Pour the all-purpose flour, whole wheat flour, nonfat dry milk, baking powder, and salt into a large mixing bowl.
Stir all the dry ingredients together with a whisk or large spoon until they are evenly distributed and well combined throughout.
Add the shortening to the dry mixture. Using a pastry blender, two knives held parallel, or your fingertips, work the shortening into the flour mixture until it resembles coarse cornmeal with small, pea-sized pieces of shortening visible throughout.
Transfer the finished baking mix to clean, covered containers and store in the refrigerator. This mix will keep for several months and is ready to use in your favorite biscuit, pancake, or quick bread recipes.
