Ingredients

3 ounces dark chocolate, chopped

1/2 cup sugar

1/4 cup brown sugar

1/2 teaspoon instant coffee granules

2 tablespoons buttermilk

1 tablespoon water

1 large egg, lightly beaten

1/2 cup Sriracha Just Mayo

3/4 cup all-purpose flour

1/4 cup cocoa powder

1/4 teaspoon baking soda

Directions

  1. Preheat your oven to 325°F. Chop the dark chocolate into small, even pieces.

  2. Melt the chopped dark chocolate using either a microwave (in 30-second intervals, stirring between each) or a double boiler over gently simmering water, stirring until completely smooth.

  3. Remove the melted chocolate from heat. Stir in the sugar, brown sugar, instant coffee granules, buttermilk, and water until well combined.

  4. Add the lightly beaten egg to the chocolate mixture and stir thoroughly until fully incorporated.

  5. Stir in the Sriracha Just Mayo until the batter is smooth and evenly blended.

  6. In a separate bowl, sift together the all-purpose flour, cocoa powder, and baking soda to remove any lumps.

  7. Gently fold the sifted dry ingredients into the chocolate mixture, stirring carefully until just combined. Do not overmix.

  8. Lightly grease a 9-inch square baking pan. Pour the batter into the pan and smooth the surface as evenly as possible.

  9. Bake for approximately 30 minutes, until a toothpick inserted into the center comes out with just a few moist crumbs clinging to it. The toothpick should not be completely dry.

  10. Remove from the oven and allow the brownies to cool completely to room temperature on the counter before cutting into nine equal pieces.
