Ingredients

4 Russet potatoes, peeled and cut into 2-inch pieces

¼ cup Butter

¼ cup Light cream

1 bunch Scallions, thinly sliced

Kosher salt

Cracked black pepper

Directions

  1. Place peeled and cubed russet potatoes in a large pot and cover with cold water. Add a pinch of kosher salt. Bring to a boil over high heat and cook until the potatoes are very tender and easily pierced with a fork, about 12–15 minutes.

  2. While the potatoes cook, gently warm the light cream and butter together in a small saucepan over low heat until the butter melts and the mixture is just warm. Remove from heat.

  3. When the potatoes are tender, drain them thoroughly in a colander and return them to the hot pot.

  4. Pour the warm cream and butter mixture over the drained potatoes and mash until smooth and creamy. Season generously with kosher salt and cracked black pepper to taste.

  5. Fold in the sliced scallions, reserving a small handful for garnish if desired. Divide among serving bowls and top with the remaining scallions. Serve hot.
