Ingredients
1 baguette, thinly sliced
3 tablespoons olive oil
1 1/2 cups pulled pork
6 ounces sharp cheddar cheese, thinly sliced
Directions
Preheat oven to 350°F.
Pour olive oil into a small bowl. Brush both sides of each baguette slice with the oil, then arrange the slices on a parchment-lined baking sheet in a single layer.
Bake for 8–10 minutes, until the slices are golden brown and crispy.
Remove from oven. Top each crostini with approximately 1/2 tablespoon of pulled pork, then place a thin slice of sharp cheddar cheese on top of the pork.
Return to oven and bake for 5 minutes, until the cheese is completely melted and the pork is heated through. Serve warm.
Comments
The 45-minute stated time ignores the fact that pulled pork requires at least four hours in a slow cooker or several hours in the oven, making this realistically a six-to-eight-hour dish if you are starting from raw meat—or a simple assembly if using store-bought pulled pork, which will cost $8 to $12 per pound. A baguette, olive oil, cheddar, and pre-made pulled pork are all easily found at Harris Teeter, Food Lion, Walmart, or ALDI, so no special trip is required. At 40 crostini, the cost per serving lands around $0.75 to $1.25 depending on whether you buy quality pulled pork or the supermarket version, and the dish is straightforward for a crowd. Crostini do not reheat well after the first day, so plan to serve this the same night or expect a soggy result.
