Ingredients
3 tablespoons Olive oil
1 medium Medium onion, halved lengthwise and thinly sliced
1 pound Carrots, peeled and sliced into 1/4-inch rounds
½ cup Golden raisins
½ teaspoon Ground cinnamon
½ teaspoon Ground cardamom
2 tablespoons Honey
½ teaspoon Salt
¾ cup Fresh orange juice
0.06 teaspoon Black pepper
1 orange Orange zest
Directions
Heat the olive oil in a large skillet over medium heat. Add the sliced onion and cook until softened and lightly caramelized, about 5 minutes, stirring occasionally.
Add the carrot rounds to the skillet and stir to combine with the onions. Cook for 3 minutes, allowing the carrots to begin softening.
Sprinkle the cinnamon and cardamom over the carrots and onions, stirring well to distribute the spices evenly and toast them for about 1 minute.
Pour in the orange juice and add the honey, salt, and a generous pinch of black pepper. Stir to combine all ingredients.
Scatter the golden raisins over the mixture and stir gently to incorporate. Reduce heat to medium-low and bring the mixture to a gentle simmer.
Cover the skillet partially and simmer for 35 to 40 minutes, stirring occasionally, until the carrots are very tender and most of the liquid has reduced. The mixture should be glossy and thick.
Taste and adjust seasoning with additional salt if needed. Remove from heat and stir in the orange zest. Transfer to a serving dish and drizzle with additional olive oil if desired. Serve warm or at room temperature.
