6 cups watermelon cubes
1 tablespoon rice vinegar
3 ounces crumbled feta cheese, drained
1 loosely packed cup fresh mint leaves
Freshly ground black pepper to taste
Flaky sea salt to taste
Directions
Cut the watermelon into 1-inch cubes, removing any seeds as you work. You should have approximately 6 cups of prepared watermelon.
Place the watermelon cubes in a large serving bowl.
Drizzle the rice vinegar evenly over the watermelon and gently toss to combine.
Tear the fresh mint leaves by hand and scatter them over the watermelon mixture.
