Crispy Garlic Brussels Sprouts with Soy and Honey Pork Belly

Ingredients
1 pound pork belly, sliced into 1/2 inch strips
¼ cup kecap manis (Indonesian sweet soy sauce)
½ cup water
¼ cup soy sauce
7 cloves garlic, minced
⅓ cup honey
1 pound brussels sprouts
salt to taste
black pepper to taste
Directions
Preheat oven to 400°F. Trim the brussels sprouts, removing yellowed or damaged leaves, then halve them lengthwise. Place them on a baking sheet, season with salt and pepper, and toss to coat evenly.
Roast the brussels sprouts for 20 minutes, then remove from oven and scatter the 3 minced garlic cloves over them. Return to oven for another 15–20 minutes, until deeply browned and crispy at the edges.
While the brussels sprouts roast, heat a large skillet over medium-high heat. Working in batches if needed to avoid crowding, brown the pork belly strips on both sides until golden, about 3–4 minutes per side. Transfer to a plate.
In the same skillet, reduce heat to medium and add the 4 minced garlic cloves. Cook for about 30 seconds until fragrant, stirring constantly.
Pour in the kecap manis, soy sauce, water, and honey. Stir to combine and bring to a gentle simmer.
Return the pork belly strips to the skillet, ensuring they are mostly submerged in the sauce. Simmer over medium heat for 15–20 minutes, stirring occasionally, until the sauce reduces and becomes thick and glossy, coating the meat.
Transfer the caramelized pork belly and sauce to a serving platter alongside the crispy garlic brussels sprouts. Serve immediately while everything is hot.
