280 grams extra-firm tofu
100 grams cherry tomatoes, halved
½ small bunch fresh parsley, chopped

Directions
Warm the olive oil in a large frying pan over medium heat. Add the sliced onion and cook, stirring occasionally, for 8 to 10 minutes until the onion turns golden brown and becomes soft and sticky.
Stir in the crushed garlic, turmeric, ground cumin, and smoked paprika. Cook, stirring constantly, for 1 minute until fragrant.
Place the extra-firm tofu in a bowl and roughly mash it with a fork, leaving some larger pieces intact for texture. Add the mashed tofu to the pan and stir to combine with the spices and onions.
Cook the tofu mixture for 3 minutes, stirring gently, allowing it to warm through and absorb the flavors.
Increase the heat to medium-high and add the halved cherry tomatoes to the pan. Cook for 5 minutes more, stirring occasionally, until the tomatoes begin to break down and soften.
Remove from heat and gently fold the chopped parsley through the mixture. Serve warm on its own or with toasted rye bread, if desired.
