Ingredients

8 Eggs

½ teaspoon Salt

½ teaspoon Black pepper

2 cups Fresh spinach, finely chopped (or frozen spinach, thawed and excess liquid squeezed out)

4 Scallions, white and green parts chopped into 1/4-inch pieces

¼ cup Crumbled feta cheese

2 teaspoons Vegetable oil

Directions

  1. Preheat your oven to 350°F. In a large mixing bowl, crack the eggs and beat them with a fork until thoroughly combined. Season the beaten eggs generously with salt and black pepper, stirring well to distribute the seasonings evenly.

  2. Add the chopped spinach, scallions, and crumbled feta cheese to the egg mixture. Stir gently but thoroughly until all ingredients are evenly distributed throughout.

  3. Place an 8-inch ovenproof skillet on the stovetop over medium heat. Once the skillet is hot, drizzle in the vegetable oil and swirl to coat the bottom and sides evenly.

  4. Pour the egg and vegetable mixture into the hot skillet and spread it evenly. Cook on the stovetop for about 1-2 minutes, just until the edges begin to set slightly. Then carefully transfer the skillet to the preheated oven.

  5. Bake in the oven for approximately 25-30 minutes, until the eggs are fully set throughout and the top is lightly golden. The center should be firm when gently pressed with a finger.

  6. Remove the frittata from the oven and let cool for a few minutes. Slice into wedges and serve warm, or cover and refrigerate for up to 24 hours for a chilled serving option.
