Ingredients
1 lemon
1/4 cup fresh parsley, finely chopped
3 garlic cloves, finely chopped
Directions
Using a vegetable peeler, carefully remove the yellow zest from the lemon in long, thin strips, avoiding the white pith underneath.
Finely mince the lemon zest strips into small pieces and transfer to a small mixing bowl.
Add the finely chopped fresh parsley and minced garlic cloves to the bowl with the lemon zest.
Stir all ingredients together until well combined. Use immediately or cover and refrigerate for up to 6 hours before serving.
Comments
Gremolata is a dead-simple Italian condiment of lemon zest, minced parsley, and minced garlic—all available year-round at every major Charlotte grocer for under $3 total. The five-minute time is honest; it's literally chopping and combining. It won't feed two people as a standalone meal, but it's meant as a bright topping for fish, soup, or braised meat, so that's not a flaw. The only constraint is that it's best used fresh the same day, though it keeps refrigerated for a couple of days.
