Ingredients

2 teaspoon dried ginger, divided (1 teaspoon for blending, 1 teaspoon for rim)

1 tablespoon honey

1 cup ice

1 lime juice (from 1 lime, divided: juice for blending and juice for rim)

1 cup fresh kale, de-stemmed and coarsely chopped

3 ounce rum

2 cup frozen strawberries

Directions

  1. Cut the lime in half. Squeeze one half to extract juice and reserve for the blender; keep the other half for rimming the glasses.

  2. Add the rum, lime juice, honey, 1 teaspoon dried ginger, chopped kale, frozen strawberries, and ice to a blender.

  3. Blend on high speed until completely smooth and no kale pieces remain visible.

  4. Run the reserved lime half around the outer rim of two cocktail glasses to lightly moisten.

  5. Pour the remaining 1 teaspoon of dried ginger onto a small plate. Roll each moistened rim through the ginger until evenly coated.

  6. Pour the blended daiquiri mixture equally into both prepared glasses.

  7. Serve immediately while the mixture is cold and frothy.
