Ingredients
¾ cup Extra-virgin olive oil
1 tbsp Fresh lemon juice
1 tbsp Fresh lime juice
1 tsp Ground coriander
1 tsp Ground cumin
1 tsp Sweet or smoked paprika
10 sprigs Fresh cilantro, minced
4 cloves Garlic cloves, minced
1 Red Fresno or Holland chile, stemmed, seeded, and minced
1 Shallot, halved and thinly sliced
Kosher salt, to taste
Directions
In a medium mixing bowl, combine the minced garlic, red chile, and sliced shallot. Stir well to combine.
Add the ground coriander, ground cumin, and paprika to the bowl. Stir until the dry spices are evenly distributed throughout the mixture.
Pour in the fresh lemon juice and lime juice, stirring to combine. Let the mixture sit for 1–2 minutes to allow the spices to bloom slightly.
Gently fold in the minced fresh cilantro until just combined, being careful not to bruise the delicate herb.
Slowly drizzle in the extra-virgin olive oil while stirring constantly to emulsify the sauce. Continue stirring until the charmoula is well blended and reaches your desired consistency.
Taste the charmoula and season with kosher salt as needed. Adjust the balance of citrus, spice, or oil to suit your preference. Serve immediately or cover and refrigerate for up to 3 days.
