Homemade Poppy Seed Dressing

Ingredients
½ tablespoon butter
2 tablespoons chopped shallot
3 tablespoons Greek yogurt, plain or vanilla
¼ cup olive oil mayonnaise
1 tablespoon olive oil
½ tablespoon cider vinegar
2 teaspoons sugar
1 tablespoon semi-sweet white wine, optional
½ tablespoon water
2-3 tablespoons poppy seeds
Directions
Melt the butter in a small skillet over medium-low heat. Add the chopped shallot and cook gently for 5-10 minutes, stirring occasionally, until the shallot is very soft, translucent, and fragrant. Remove from heat and set aside to cool slightly.
Transfer the cooled sautéed shallot to a food processor. Add the Greek yogurt, mayonnaise, olive oil, cider vinegar, sugar, and white wine (if using). Blend until smooth and well combined, about 1-2 minutes.
Taste the dressing and adjust the seasoning as needed. If the dressing is too thick, add the water a little at a time and blend until you reach your desired consistency.
Transfer the dressing to a bowl and fold in the poppy seeds by hand until evenly distributed. Cover and refrigerate until ready to serve.
