Ingredients
2 tbsp silvered almonds
3 cup cooked chicken, chopped into bite-sized pieces
2 celery ribs, diced
¾ cup sweetened dried cranberries
½ small sweet onion, finely diced
¾ cup mayonnaise
1 tbsp Greek seasoning
2 tbsp fresh lemon juice
Directions
Toast the silvered almonds in a dry skillet over medium heat for 2–3 minutes, stirring frequently, until fragrant and lightly golden. Transfer to a plate to cool.
In a large bowl, combine the chopped cooked chicken, diced celery, dried cranberries, and diced sweet onion.
In a small bowl, whisk together the mayonnaise, Greek seasoning, and fresh lemon juice until smooth.
Pour the dressing over the chicken mixture and toss gently until all ingredients are evenly coated.
Fold in the cooled toasted almonds, reserving a small handful for garnish if desired.
Taste and adjust the seasoning if needed. Serve immediately or refrigerate until ready to serve.
Comments
Every ingredient lands at any Charlotte grocery chain—almonds and dried cranberries at ALDI or Food Lion are especially cheap, and rotisserie chicken from Walmart or Harris Teeter cuts real time. The 15-minute claim holds if you use store-bought chicken; dice it while the celery and onion soften, toast the almonds in a dry pan (two minutes), and mix. Cost per serving runs $2–2.50 depending on chicken price, well-suited for a lunch box or light weeknight dinner that reheats fine for leftovers. The caveat is household fit: this feeds six as a side or salad base, not a standalone main, and it asks nothing technically but does need brief attention to finish rather than a dump-and-go meal.
