Ingredients
2 cups All-purpose flour
2 cups Ground walnuts
½ pound Unsalted butter, softened
1 cup Granulated sugar
2 Egg yolks
2 tablespoons Sour cream
1 Lemon zest
2 jars Triple berry fruit spread with honey
Directions
Preheat your oven to 350°F and lightly grease a 9×13-inch baking pan with butter or cooking spray.
In a large mixing bowl, beat together the softened butter and sugar until light and fluffy, about 2–3 minutes.
Add the egg yolks, lemon zest, and sour cream to the butter mixture and beat until well combined and smooth.
In a separate medium bowl, whisk together the flour and ground walnuts to distribute them evenly.
Gently fold the dry ingredients into the wet ingredients until a soft, unified dough forms. Do not overmix.
Press approximately two-thirds of the dough evenly into the bottom of the prepared baking pan, pressing slightly up the sides to create a shallow border that will contain the jam.
Spread the triple berry fruit spread evenly over the base layer of dough, leaving a small margin from the edges.
Roll out the remaining one-third of dough between two sheets of parchment paper to an even thickness, then cut into strips approximately ½ to 1 inch wide.
Arrange the dough strips in a lattice pattern over the fruit filling, creating a crisscross design.
Bake for 45 minutes, until the lattice top is golden brown and a toothpick inserted into the dough portion comes out clean.
Remove from the oven and allow the bars to cool completely in the pan before cutting and serving.
Comments
The ingredient list is straightforward and available everywhere—no special stops needed at Harris Teeter, Food Lion, Publix, Walmart, ALDI, or Kroger. Cost runs roughly $1.20 per bar: butter and walnuts drive the price, but fruit spread is where you save money versus fresh jam. The stated 70 minutes ignores significant chill time; with rolling, cutting, and proper setting, expect 100 minutes or an overnight fridge stay. This is a make-ahead holiday cookie that reheats well and suits Charlotte winters better than a summer weeknight, and it works fine for a family gathering or cookie swap.
