Ingredients

4 boneless, skinless chicken breast halves (6 to 8 ounces each)

Coarse salt to taste

Freshly ground pepper to taste

1 tablespoon olive oil

Directions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with coarse salt and freshly ground pepper.

  2. Heat the olive oil in a large skillet over medium-high heat until shimmering and just beginning to smoke.

  3. Carefully place the seasoned chicken breasts into the hot skillet. Do not move them for the first 5 to 6 minutes to allow a golden crust to form on the bottom.

  4. Flip the chicken breasts and cook for another 5 to 7 minutes on the second side until the thickest part reaches an internal temperature of 165°F when measured with an instant-read thermometer.

  5. Transfer the cooked chicken breasts to a clean plate and let rest for 2 to 3 minutes before serving.
