Ingredients

12 oz Frozen broccoli florets, steamed

1 cup Cooked quinoa

2 tbsp Extra virgin olive oil

8 oz Shredded cheddar cheese

8 oz Cooked uncured turkey bacon, chopped

2 tbsp Grated Parmesan cheese

¼ tsp Salt

Directions

  1. Preheat your oven to 400°F. If you haven't already steamed your broccoli florets, do so until just tender, then drain well.

  2. In a large mixing bowl, combine the steamed broccoli florets, cooked quinoa, chopped turkey bacon, and shredded cheddar cheese.

  3. Drizzle the olive oil over the mixture and add the salt. Stir everything together until evenly combined.

  4. Transfer the mixture to an 8-by-8-inch baking dish, spreading it out in an even layer.

  5. Sprinkle the grated Parmesan cheese evenly over the top of the casserole.

  6. Bake in the preheated oven for 20 to 25 minutes, until the top is golden brown and the casserole is heated through.

  7. Remove from the oven and let rest for a few minutes before serving.

Quinoa, cheddar, turkey bacon, and broccoli are all stocked at Harris Teeter, Food Lion, Walmart, and ALDI—no special stops needed. At roughly $2–2.50 per serving, the cost is reasonable, though turkey bacon and cheddar add up faster than eggs or pasta would. The 35-minute estimate is honest: about 10 minutes to rinse quinoa and prep broccoli, 15 to cook the grain, and 10 in the oven. This is a true set-it-and-forget-it casserole that feeds a family well and reheats solidly the next day, making it a weeknight workhorse with enough protein to stick around.
