Ingredients
2 Hass avocados, halved, pitted, and sliced
1 Champagne mango, peeled, pitted, and diced
1 Cucumber, peeled and sliced
1 handful Thai basil leaves, roughly chopped
2 Fresh limes, juiced
1 pinch Sea salt
1 pinch Fresh ground black pepper
Directions
Halve each avocado lengthwise, remove the pit, and carefully scoop the flesh into a bowl. Slice each half into thin pieces and gently toss to combine.
Peel the mango and remove the pit. Cut the flesh into small cubes and add to the bowl with the avocado.
Peel the cucumber with a vegetable peeler or knife and slice it into rounds or half-moons. Add to the bowl.
Roughly chop the Thai basil leaves and scatter over the salad.
Juice the limes and drizzle the fresh lime juice over all ingredients.
Season with sea salt and freshly ground black pepper to taste. Gently toss all ingredients together until lightly combined, taking care not to crush the delicate avocado and mango.
Divide among six serving plates or bowls and serve immediately while the salad is fresh and the avocado is still firm.
