1 cup rolled oats (old-fashioned or quick oats)

2½ cups water

½ cup dried fruit (raisins, cranberries, or dried apricots)

¼ cup walnuts, lightly chopped

Directions

  1. Wash your hands thoroughly with soap and warm water before preparing the meal.

  2. In a medium cooking pot, combine the oats, water, dried fruit, and walnuts. Stir well to distribute all ingredients evenly.

  3. Cover the pot with a lid and place it in the refrigerator. Allow the mixture to soak overnight, or for at least 8 hours.

  4. In the morning, place the covered pot on a stovetop burner set to medium heat. Bring the mixture to a gentle simmer, stirring occasionally to prevent sticking, about 3–5 minutes.

  5. Once simmering, reduce the heat to low. Continue cooking and stirring occasionally for 5–15 minutes, depending on the type of oats used: quick oats need about 5 minutes, regular rolled oats need 10–12 minutes, and steel-cut oats need 15 minutes or longer. Cook until the oatmeal reaches your desired consistency—creamy and tender but not mushy.

  6. Divide the warm oatmeal between two bowls. Serve with a splash of milk or milk alternative, a drizzle of maple syrup, and fresh fruit on the side if desired.
