Ingredients

1 to 1.5 pounds boneless, skinless chicken breasts

1 tablespoon chili powder

1 tablespoon cumin

1 tablespoon garlic powder

1 teaspoon Italian seasoning

1 tablespoon brown sugar

1/2 teaspoon paprika

1 (15-ounce) can black beans, with liquid

1/4 cup salsa

4 cups lettuce, chopped or torn

1 small red onion, diced

1 to 2 tomatoes, diced

1/2 cup corn

1 bunch green onions, chopped

Fresh cilantro, chopped

1 avocado, sliced

1 cup tortilla chips, crushed or lightly broken

Directions

  1. Coat the interior of a slow cooker with non-stick cooking spray.

  2. Place the chicken breasts in the slow cooker in a single layer.

  3. In a small bowl, mix together the chili powder, cumin, garlic powder, Italian seasoning, brown sugar, and paprika until evenly combined. Sprinkle the seasoning mixture over the chicken.

  4. Pour the black beans with their liquid and the salsa over the chicken. Cover the slow cooker and cook on low for 4 to 5 hours, until the chicken is very tender and shreds easily with a fork.

  5. Remove the chicken from the slow cooker and place on a cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir to combine with the beans and sauce. Keep warm for 30 minutes.

  6. Divide the lettuce among four serving bowls. Top each with the diced red onion, tomatoes, corn, green onions, fresh cilantro, avocado slices, and crushed tortilla chips.

  7. Top each salad with the warm shredded chicken and bean mixture, dividing evenly. Serve immediately with your favorite salsa or dressing on the side.
