Salmon Burgers

Ingredients
1 2/3 cups coarse cracker crumbs
1 small onion, chopped
1 can (16 ounces) salmon, drained
2/3 cup low-fat milk
2 eggs, well beaten
1/2 cup chopped celery (optional)
Salt and pepper to taste
Non-stick cooking spray
Directions
Wash your hands thoroughly with soap and warm water before beginning.
In a large mixing bowl, combine the cracker crumbs, chopped onion, drained salmon, milk, beaten eggs, and celery if using. Mix until all ingredients are well combined. The mixture should be moist and hold together.
Generously coat a large skillet with non-stick cooking spray and place over medium-high heat until the skillet is hot and the spray is shimmering.
Using a 1/3 or 1/2 cup measuring cup, scoop portions of the salmon mixture and carefully drop them onto the hot skillet, flattening slightly with the back of a spatula to form patties about 1/2 inch thick.
Cook the patties for 4-5 minutes on the first side until golden brown and crispy at the edges.
Carefully flip the burgers and cook for an additional 4-5 minutes on the second side until they are golden brown throughout. The internal temperature should reach 160°F when checked with a food thermometer, indicating the eggs are fully cooked.
Season with additional salt and pepper to taste. Transfer to a serving plate and serve immediately with your favorite toppings or sides.
