Ingredients

3 tablespoons Olive oil

3 tablespoons Garlic, minced

to taste Salt

to taste Black pepper, freshly ground

4 pounds Pork shoulder

Directions

  1. Preheat your oven to 425 degrees F.

  2. In a small bowl, combine the olive oil, minced garlic, salt, and freshly ground black pepper. Stir until well blended to create a paste-like seasoning mixture.

  3. Using a pastry brush or your hands, generously coat all surfaces of the pork shoulder with the garlic and oil mixture, rubbing it into the meat.

  4. Place the pork shoulder on a rack set in a roasting pan. This allows air to circulate underneath for even cooking.

  5. Roast at 425 degrees F for 20 minutes to develop a browned exterior.

  6. Reduce the oven temperature to 325 degrees F and continue roasting. After approximately 4 hours, check the internal temperature with an instant-read thermometer inserted into the thickest part of the shoulder. The pork is done when the thermometer reads 185 degrees F.

  7. Remove the pork shoulder from the oven and allow it to rest for about 30 minutes until it is cool enough to handle. This resting time allows the juices to redistribute throughout the meat.

  8. Once cooled, the pork shoulder can be shredded with forks or sliced as desired. Serve hot.
