Frozen Peaches With Strawberries and Mint

Ingredients
3/4 cup granulated sugar
6 large ripe peaches (about 3 1/2 pounds total), halved and pitted
1 vanilla bean, split lengthwise
3 sprigs fresh spearmint or mint
1 tablespoon fresh lemon juice
1 cup small strawberries, halved lengthwise
1/2 cup water
Directions
In a large straight-sided skillet or Dutch oven, sprinkle the sugar evenly across the bottom. Arrange the peach halves, cut side up, in a single layer over the sugar. Scrape the vanilla seeds from the split bean and add both the seeds and pod to the pan. Scatter the mint sprigs over the peaches. Pour water into the pan until it reaches halfway up the sides of the peaches. Place over low heat and bring to a very gentle simmer, stirring once or twice just until the sugar dissolves completely. Allow the peaches to simmer gently, turning them once halfway through, until they are tender but still hold their shape, approximately 5 to 10 minutes. Remove from heat and let cool to room temperature.
Remove and discard the vanilla pod and mint sprigs from the poaching liquid. Stir in the fresh lemon juice. Gently peel the skin off each peach—the skin should slip off easily—and place the peaches cut side down in a 3-quart shallow baking dish. Pour the poaching liquid over the peaches. Place the dish in the freezer until the peaches are frozen throughout but still soft enough to cut with a spoon, approximately 45 to 60 minutes. The poaching liquid should become partially frozen and break into shards when scraped with a fork, resembling granita.
Just before serving, scatter the halved strawberries over the top of the frozen peaches.
The peaches can be poached and prepared up to 1 day in advance. Allow them to cool completely in the poaching liquid, cover the dish, and refrigerate until ready to freeze and serve.
