Chocolate Chip Pumpkin Bites

Ingredients
1 cup palm shortening
1 cup pure maple syrup
1 cup pumpkin puree
6 eggs
1 tsp vanilla extract
2 cups coconut flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1 tsp ground nutmeg
½ tsp salt
10 oz dairy-free chocolate chips
1 cup chopped walnuts, optional
Directions
Preheat your oven to 350°F (175°C) and lightly grease a cookie sheet.
In a stand mixer, combine the palm shortening, maple syrup, pumpkin puree, eggs, and vanilla extract. Mix on medium speed until well blended. The shortening will not fully incorporate, which is normal and will create the dense texture.
In a separate bowl, sift together the coconut flour, baking powder, baking soda, cinnamon, nutmeg, and salt to break up any lumps.
Add the dry ingredients to the wet mixture in ½-cup batches, mixing on low speed after each addition until just combined. The batter will become very thick and dense as the coconut flour absorbs the wet ingredients.
Once all dry ingredients are fully incorporated, fold in the dairy-free chocolate chips. If using walnuts, add them now as well.
Spoon mounds of batter onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 15 minutes until the bites are set and the tops are lightly golden. A toothpick inserted into the center should come out mostly clean with a few moist crumbs.
Allow the bites to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.
