Ingredients

9 ounces Fresh spinach leaves

5 tablespoons Olive oil, divided

1 medium Medium red onion, halved and cut into 1/3-inch-thick wedges

7 ounces Feta cheese, coarsely crumbled

2 tablespoons Sherry wine vinegar

Salt, to taste

Black pepper, to taste

Directions

  1. Pour the fresh spinach leaves into a large bowl and set aside.

  2. Heat 2 tablespoons of olive oil in a heavy, large skillet over high heat until shimmering.

  3. Add the red onion wedges to the hot oil and cook, stirring occasionally, until they become golden brown and tender, about 7 minutes. Transfer the caramelized onion to the bowl with the spinach.

  4. Remove the skillet from the heat and add the remaining 3 tablespoons of olive oil and the crumbled feta cheese to the warm pan.

  5. Stir gently for about 1 minute to slightly soften and warm the cheese, creating a creamy mixture.

  6. Stir in the sherry wine vinegar and season the warm dressing to taste with salt and pepper.

  7. Pour the warm feta dressing over the spinach and onion in the bowl, then toss gently to coat the greens evenly and allow them to wilt slightly from the warmth of the dressing. Serve immediately.
