Tender slices of beef tenderloin are seared on a hot grill pan, then marinated in a savory-sweet glaze combining hoisin, ketchup, barbecue sauce, fish sauce, soy sauce, fresh ginger, and fresh herbs. After at least an hour of flavor development in the refrigerator, the beef is threaded onto bamboo skewers and garnished with cilantro for an impressive Korean-inspired appetizer or main course.

Ingredients
3 lb beef tenderloin, trimmed and sliced to 1/2-inch thickness
¼ cup hoisin sauce
¼ cup ketchup
¼ cup prepared barbecue sauce
1 tbsp fish sauce (nam pla)
¼ cup soy sauce
2 inch ginger, peeled and grated
1 tbsp vegetable oil
1 tbsp scallions, chopped
1 tbsp fresh cilantro, chopped, plus extra for garnish
Directions
Heat a grill pan over high heat for 2 minutes until very hot. Arrange the beef slices on the pan in a single layer and sear for 1 minute on each side until lightly browned. The interior should reach a minimum internal temperature of 145°F for whole cuts of beef. Remove the beef immediately to a plate and allow to cool slightly.
In a large bowl, whisk together the hoisin sauce, ketchup, barbecue sauce, fish sauce, soy sauce, grated ginger, vegetable oil, chopped scallions, and chopped cilantro until well combined and smooth.
Add the cooled seared beef to the glaze mixture and toss gently to coat all pieces evenly. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
Remove the beef and glaze from the refrigerator. Thread one piece of marinated beef onto a 6-inch bamboo skewer, threading through the center of each slice. Repeat with the remaining beef pieces to create individual skewers.
Arrange the filled skewers on a serving platter and garnish with additional chopped fresh cilantro. Serve immediately, optionally drizzling any remaining glaze over the skewers if desired.
Comments
Fish sauce is the real obstacle here—you'll need to hunt it down at Harris Teeter, Kroger, or Walmart's international aisle, adding a hunt to your prep unless you already stock it. The marinade relies on four bottled condiments that drive cost even though the beef dominates the bill; at Charlotte prices, expect $1.50 to $2.00 per skewer in protein alone, making this a special-occasion dish rather than weeknight casual. The 165-minute time is honest for marinating and grilling 90 skewers in batches, but a home cook realistically needs two hours end-to-end plus dedicated grill space and cleanup. These skewers reheat poorly—they dry out—so plan to serve them fresh, all at once, which works for a crowd but not for leftovers.
