9 ounces Fresh spinach leaves

5 tablespoons Olive oil

1 Medium onion, cut into wedges

7 ounces Crumbled feta cheese

2 tablespoons Sherry wine vinegar

Directions

  1. Place the fresh spinach in a large bowl and set aside.

  2. Heat the olive oil in a skillet over medium heat. Add the onion wedges and cook for 5–7 minutes, stirring occasionally, until they become softened and lightly caramelized.

  3. Remove the skillet from heat. Add the crumbled feta cheese to the warm oil and onions, then pour in the Sherry wine vinegar. Stir gently until the feta begins to soften and incorporate into the warm dressing.

  4. Pour the warm feta dressing and onions over the spinach in the bowl. Toss gently but thoroughly until the spinach is evenly coated and begins to wilt from the residual heat.

  5. Divide the wilted spinach among four serving plates and drizzle any remaining warm dressing from the bowl over each portion. Serve immediately while still warm.
