3 cups all-purpose flour, plus more for dusting
1 tablespoon plus 1 teaspoon Caribbean-style curry powder
1 teaspoon baking powder
1 teaspoon kosher salt
½ cup cold beef suet, coarsely chopped
½ cup vegetable shortening, coarsely chopped
Directions
In a large mixing bowl, whisk together the flour, curry powder, baking powder, and salt until evenly combined.
Add the cold beef suet and vegetable shortening to the flour mixture. Using a pastry cutter, two knives, or your fingertips, work the fats into the flour until the mixture resembles coarse breadcrumbs with pea-sized pieces of fat distributed throughout.
Gradually add ice water, a tablespoon at a time, tossing gently with a fork until the dough just comes together. Handle as little as possible to keep the pastry tender and flaky.
Divide the dough in half, flatten each into a disk, wrap in plastic, and refrigerate for at least 30 minutes before rolling and filling.
