Ingredients
1 cup drained kimchi
1/2 cup cooked brown rice
1/2 pound ground beef
1 large egg
2 pinches kosher salt
2 tablespoons canola oil
Directions
Chop the drained kimchi into small pieces. In a large bowl, combine the chopped kimchi, cooked brown rice, ground beef, egg, and kosher salt until just mixed—do not overwork the meat.
Divide the mixture into 4 equal portions and shape each into a patty about 3/4 inch thick.
Heat canola oil in a skillet or griddle over medium-high heat until shimmering.
Carefully place the patties in the hot oil and cook for 3–4 minutes on the first side until golden brown.
Flip the patties and cook for another 3–4 minutes on the second side until the internal temperature reaches 160°F, indicating the ground beef is fully cooked.
Remove from heat and serve warm on buns or over rice if desired.
