12 ounces mixed salad greens

2 ripe bananas

2½ medium apples, sliced

¾ cup unsalted dry roasted peanuts

⅓ cup plain low-fat yogurt

2 tablespoons fat-reduced mayonnaise

1 tablespoon honey

2 teaspoons paprika

Directions

  1. In a small bowl, whisk together the plain low-fat yogurt, fat-reduced mayonnaise, honey, and paprika until well combined and smooth. Set the dressing aside.

  2. Slice the ripe bananas into rounds or diagonal slices, keeping them separate until ready to assemble.

  3. Place the mixed salad greens in a large salad bowl. Add the sliced apples and sliced bananas, then sprinkle the unsalted dry roasted peanuts over the top.
