Ingredients

1 1/2 pounds russet potatoes (about 2 to 3 medium potatoes)

1/2 medium yellow onion

2 large eggs

1/4 cup matzo meal

2 teaspoons kosher salt

1/2 teaspoon freshly ground black pepper

Cooking spray

Sour cream, for serving

Applesauce, for serving

Directions

  1. Peel the russet potatoes and roughly chop them. Peel the onion half and chop it into chunks. Working in batches, finely grate the potatoes and onion together using a box grater or food processor. Transfer the grated mixture to a clean kitchen towel or cheesecloth.

  2. Gather the corners of the towel and squeeze out as much liquid as possible from the potato-onion mixture. This step is essential for crispy latkes. Transfer the squeezed mixture to a large bowl.

  3. Crack the eggs into the bowl with the potato mixture. Add the matzo meal, kosher salt, and black pepper. Mix until all ingredients are evenly combined, creating a thick, cohesive batter.

  4. Preheat your air fryer to 375°F (190°C) for 5 minutes.

  5. Using a spoon or your hands, form the batter into patties about 2 to 3 inches wide and roughly 1/2 inch thick. You should have about 12 to 15 latkes depending on size.

  6. Lightly coat the air fryer basket with cooking spray. Arrange the latkes in a single layer in the basket, working in batches if needed to avoid overcrowding. Spray the tops of the latkes lightly with cooking spray.

  7. Air fry at 375°F (190°C) for 12 to 15 minutes, shaking the basket and flipping the latkes halfway through cooking, until they are golden brown and crispy on both sides.

  8. Transfer the cooked latkes to a serving plate. Repeat with any remaining batter if cooking in batches.

  9. Serve the warm latkes with sour cream and applesauce on the side for dipping.
