Ingredients

1/2 cup soy sauce

2 tablespoons rice wine vinegar

1/4 cup mirin

3/4 cup brown sugar

2 medium cloves garlic, minced

1 teaspoon grated fresh ginger

1/2 teaspoon crushed dried red pepper

2 teaspoons toasted sesame oil

1 tablespoon corn starch

1/4 cup finely sliced scallions

Directions

  1. In a medium saucepan, combine soy sauce, rice wine vinegar, mirin, and brown sugar over medium heat, stirring occasionally until the sugar dissolves completely.

  2. Add minced garlic, grated ginger, and crushed dried red pepper to the saucepan, stirring well to incorporate the aromatics throughout the sauce.

  3. In a small bowl, mix corn starch with 2 tablespoons of water to create a smooth slurry.

  4. Slowly pour the corn starch slurry into the saucepan while stirring constantly to prevent lumps from forming.

  5. Continue cooking, stirring frequently, until the sauce thickens and becomes glossy, about 2–3 minutes.

  6. Remove from heat and stir in the toasted sesame oil until evenly blended.

  7. Transfer the sauce to a serving bowl and garnish with finely sliced scallions just before serving with crispy fried chicken.
