1½ cups fresh raspberries

2 tablespoons granulated sugar

2 cups heavy whipping cream

¼ cup confectioners sugar

1 teaspoon vanilla extract

½ cup fresh raspberries for topping

Directions

  1. Place the 1½ cups of fresh raspberries and granulated sugar in a food processor or blender. Process until the mixture forms a smooth puree, then set aside.

  2. In a large mixing bowl, combine the heavy whipping cream, confectioners sugar, and vanilla extract.

  3. Using an electric hand mixer or whisk, beat the cream mixture until stiff peaks form—the cream should hold its shape when the beaters are lifted.

  4. Using a rubber spatula, gently fold approximately ¾ of the raspberry puree into the whipped cream, making a few broad strokes to create visible swirls of color throughout.

  5. Gently fold in the remaining puree with a few final strokes, being careful not to overmix and lose the beautiful marbled appearance.

  6. Divide the raspberry fool evenly among 4 to 6 serving glasses or small bowls. Top each portion with fresh raspberries and serve immediately.
