1 large onion, finely chopped

2 large cloves garlic, crushed

2 tablespoons safflower oil

2 pounds lean ground lamb

1 tablespoon Madras curry powder

1/2 teaspoon ground turmeric

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

3 tablespoons mango chutney

1 large lemon, juiced

4 tablespoons pine nuts, unsalted

1/2 cup seedless raisins

6 ounces white pearl onions, blanched and peeled

1 large slice day-old bread, crust removed

1/2 cup whole milk

3 eggs (1 for filling, 2 for topping)

4 strips lemon rind, about 1/2 inch wide

1-2 dashes Sriracha chili sauce (optional)

Directions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.

  2. Soak the bread slice in the milk for 5 minutes until fully absorbed, then break it into small pieces with a fork.

  3. Heat the safflower oil in a large skillet over medium-high heat. Add the chopped onion and cook, stirring frequently, for about 4-5 minutes until softened and translucent.

  4. Add the crushed garlic to the skillet and cook for 1 minute until fragrant.

  13. Return to the oven and bake for an additional 15-20 minutes until the custard topping is set and lightly golden.

  14. For a deeper golden color, place under the broiler for 1-2 minutes, watching carefully to prevent burning.

  15. Remove from oven and let rest for 5 minutes. Serve hot, ensuring the custard topping has reached 160°F internally for food safety.
