Shrimp Scampi Foil Packets

Ingredients
1 (12-oz) package frozen shrimp scampi
1 small zucchini, thinly sliced
1 small yellow squash, thinly sliced
1 red bell pepper, seeded and thinly sliced
½ small red onion, very thinly sliced
Non-stick cooking spray
Directions
Prepare the frozen shrimp scampi according to the package directions, keeping the cooked shrimp warm until assembly.
Preheat your outdoor grill to high heat.
Cut eight pieces of aluminum foil to equal lengths, then layer them in pairs to create four double-thickness sheets. Lightly spray both sides of each double sheet with non-stick cooking spray.
On each prepared foil sheet, arrange a layer of sliced zucchini and yellow squash down the center. Divide the warm shrimp scampi evenly among the four packets, placing it on top of the vegetables. Finish by topping each packet with sliced red bell pepper and red onion.
Fold the foil up and around each portion to create sealed packets, leaving some room for steam circulation. Place the packets directly on the hot grill grate.
Grill for approximately 15 to 20 minutes, until the zucchini and yellow squash are tender when pierced with a fork. Carefully open packets away from your face to release steam, then serve immediately.
