Ingredients

½ cup Orzo pasta

1 tbsp Olive oil

1 medium White onion, chopped

2 clove Garlic cloves, minced

½ tsp Red pepper flakes

¼ cup Dry white wine

1½ cup Canned diced tomatoes

1 tsp Dried oregano

2 tbsp Fresh parsley, chopped

2 medium Scallion greens, sliced

½ lb Large shrimp, peeled and deveined

½ cup Feta cheese, crumbled

Salt and black pepper to taste

Directions

  1. Preheat your oven to 400°F. Cook the orzo pasta according to package directions until just al dente, then drain and set aside.

  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 3 minutes until softened and translucent.

  3. Stir in the minced garlic and red pepper flakes, cooking for another minute until fragrant, being careful not to burn the garlic.

  4. Pour in the white wine and let it simmer for 2 minutes to reduce slightly and allow the alcohol to cook off.

  5. Add the diced tomatoes with their juice and the dried oregano. Bring the mixture to a gentle simmer and cook for 5 minutes to meld the flavors.

  6. Nestle the shrimp into the tomato sauce, distributing them evenly throughout. Stir in the cooked orzo pasta and fold gently to combine everything together.

  7. Top with the crumbled feta cheese scattered evenly across the surface. Transfer the skillet to the oven and bake for 8 to 10 minutes, just until the shrimp are opaque and cooked through (internal temperature reaches 145°F).

  8. Remove from the oven and taste, then season with salt and black pepper as needed. Garnish with fresh chopped parsley and sliced scallion greens before serving.

This is a straightforward sheet-pan dinner with ingredients you'll find at any Charlotte grocer—Harris Teeter, Food Lion, Walmart, or ALDI stock everything from orzo to bulk shrimp to feta. The 35-minute stated time is honest for a weeknight: boil the pasta, sauté aromatics and shrimp, bake everything together. At $3–4 per serving, shrimp is the cost driver, but one pound feeds four generously when paired with pasta and vegetables. The dish holds up well as leftovers and reheats gently; the only caveat is that feta can dry slightly if refrigerated, so eat fresh when possible or store the cheese separately.
