Ingredients

2 to 4 Chicken quarters

2 tablespoons Olive oil

1 teaspoon Freshly ground black pepper

1 teaspoon Garlic powder

1 teaspoon Ground cumin

1 teaspoon Onion salt

Directions

  1. Preheat your grill to 400°F, allowing 20–30 minutes for it to reach temperature.

  2. Remove chicken quarters from the refrigerator and let them sit at room temperature for about 10 minutes.

  3. In a small bowl, combine black pepper, garlic powder, ground cumin, and onion salt.

  4. Pat the chicken quarters dry, then rub them evenly with olive oil on all sides.

  5. Coat the oiled chicken thoroughly with the spice mixture, pressing gently to help it adhere.

  6. Place seasoned chicken quarters on the hot grill, skin-side down. Grill for 12–18 minutes until golden brown.

  7. Flip the chicken quarters and continue grilling for another 12–18 minutes, turning once more if needed to ensure even cooking.

  8. In the final 5 minutes of cooking, move the chicken to a cooler area of the grill to prevent excessive charring.

  9. Cook until the thickest part of the chicken (at the thigh) reaches an internal temperature of 165°F.

  10. Transfer the grilled chicken to a clean serving platter and let rest for 10 minutes before serving.
