Ingredients

½ lemon lemon zest

⅓ cup fresh lemon juice

5 Tb. granulated sugar

1 large egg

Directions

  1. In a medium heatproof bowl, whisk together the egg, sugar, lemon juice, and lemon zest until well combined and the sugar begins to dissolve.

  2. Place the bowl over a pot of gently simmering water, making sure the bottom of the bowl does not touch the water. Stir constantly with a whisk or wooden spoon.

  3. Continue stirring over the hot water until the mixture reaches 160°F on an instant-read thermometer and coats the back of a spoon. This should take 12–15 minutes.

  4. Remove the bowl from the heat and let the lemon curd cool for a few minutes. It will thicken further as it cools. Divide among serving dishes or small jars and serve warm or chilled.
